3 to 5 cloves garlic, minced
1 large onion, chopped
1 cup salsa
Protein...
1 can red beans
1 can black beans
1 to 1 1/2 lbs. ground bison
Veggies...
1 red bell pepper, chopped
2 can cooked diced tomatoes
1 can corn, drained
Spice...
1 1/2 Tbsp. Worcestershire sauce
1 1/2 tsp. oregano
1 1/2 Tbsp. cinnamon
1 Tbsp. cumin
1 1/2 Tbsp. basil
1/3 cup brown sugar or molasses
1 1/2 tsp. chili powder
1 tsp Sante Fe red pepper flakes
Cook It
Mince garlic and let stand for 10 minutes. This greatly enhances it's nutritional value.
In a big deep pot, sauté in olive oil - red pepper and lastly garlic. Add bison and cook until brown.
Add remaining ingredients and simmer on low for at least an hour or until the whole house smells good.
