Why oh why buy bland boring store bought hummus made with cheap / less that healthy oils? Make your own, it's as easy as cooking up some chickpeas and then letting the food processor rip until this healthy creamy delicious ethnic dip is ready to consume...
1.5 c / a can chickpeas
1/3 cup tahini
1/4 cup extra-virgin olive oil
1 of clove garlic - press and rest for 10 min
1 tbs sante fe chili pepper flakes
1 tablespoon ground paprika
3 tbs lime juice - watch consistency
1 bunch fresh cilantro chopped
3 artichoke hearts
12 Black olives
1 tbs turmeric dried or 1 tsp fresh / grated
Salt and freshly ground black pepper to taste
Add enough kefir / yogurt - to make hummus creamy
Run it all through your food processor, error on the side of a bit runny.
Best use - use as a dip for sliced red bell peppers! The sweet crunchy wetness of the pepper goes so well with the nutty spicy hummus - wow!
